Modern cafe from pastry chef to barista

The program is aimed at developing competencies in accordance with the labor functions of a pastry chef, chocolatier, bartender, barista.

As a result of the training, the graduate of the program will be able to:
• assess the availability and predict the need for raw materials and materials for confectionery production in accordance with the existing storage conditions;
• carry out work on the preparation of the workplace and technological equipment, tools for the preparation of confectionery and drinks;
• apply regulations, standards and normative and technical documentation used in the production of confectionery, chocolate products and drinks, as well as in organizing the work of a public catering enterprise;
• develop and apply recipes and technologies for the preparation of confectionery, chocolate products and drinks;
• comply with the rules of service culture, protocol and etiquette of service to consumers of the catering organization.

Scope of the program: 144 hours (including contact 100 hours)
Implementation mode: full-time and part-time with the use of DOT
Terms of implementation of the program: 2 months.

Entrance requirements: secondary vocational or higher education.

The program will also be useful for specialists who decide to open their own cafe or pastry shop.
Classes are held, among other things, in the Innovative Confectionery Center "Health food Lab" and the research laboratory for the design of confectionery products of the Moscow State University of Food Industry.
Sommelier / cavist

The program is aimed at developing competencies in accordance with the labor functions of a sommelier, cavist.
As a result of the training, the graduate of the program will be able to:
• draw up and correct the wine list of the catering company, introduce new drinks into the wine collection of the catering company, taking into account the emerging needs of consumers;
• interact with the chef to ensure the compatibility of the wine and gastronomic menu of the catering company;
• resolve controversial issues with consumers in the field of compliance of wines and drinks with the declared level;
• control the process of serving wine and other drinks by the service personnel, compliance with the protocol and etiquette;
• organize presentations and promotions for suppliers of wines and other beverages on the territory of the catering establishment.

Scope of the program: 144 hours (including contact 100 hours)
Implementation mode: full-time and part-time with the use of DOT
Terms of implementation of the program: 2 months.

Entrance requirements: secondary vocational or higher education, age over 18 years old.

This comprehensive program is also suitable for training service and hospitality professionals (waiters, bartenders, hall managers) with the aim of in-depth training in the skills of selling and serving wine in public catering establishments.
Technology of meat and meat products

The program is aimed at developing competencies in accordance with the labor functions of a specialist in the technology of food products of animal origin.
As a result of the training, the graduate of the program will be able to:
• plan work on the placement of equipment, technical equipment and organization of workplaces.
• to master new types of technological equipment when changing the schemes of technological processes, to master new instrumental techniques and new research methods.
• to apply the fundamentals of technology of food products of animal origin, based on knowledge of the physicochemical, technological and biotechnological properties of raw materials.

Dairy processing technology

The program is aimed at developing competencies in accordance with the labor functions of a specialist in milk processing and dairy products production (specialist in the technology of food products of animal origin).

As a result of the training, the graduate of the program will be able to:
• use normative and technical documentation, regulations, veterinary norms and rules in the production process.
• organize incoming quality control of raw materials and auxiliary materials, production control of semi-finished products, parameters of technological processes and quality control of finished products;
• organize the technological process for the production of food products of animal origin;

Technology of brewing and non-alcoholic production

The program is aimed at developing competencies in accordance with the labor functions of a brewery technologist (food processing engineer), a specialist in the production of beer and non-alcoholic products.

As a result of the training, the graduate of the program will be able to:
• carry out the selection and quality control of raw materials, auxiliary materials, semi-finished products and finished products in the production of beer and soft drinks;
• monitor the main stages of the production of beer and soft drinks;
• identify critical factors at individual technological operations and propose measures to reduce manufacturing defects;
• substantiate the consumption rates of raw materials and auxiliary materials in the production of beer and soft drinks;
• organize and manage the production process in the production of beer and non-alcoholic products, the quality of finished products.

Cheese production technology

The program is aimed at developing competencies in accordance with the labor functions of a cheese maker, cheese maker, cheese production technologist (specialist in the technology of food products of animal origin).

As a result of the training, the graduate of the program will be able to:
• plan work on the placement of equipment, technical equipment and organization of workplaces, justify the consumption rates of raw materials, semi-finished products and auxiliary materials;
• apply the fundamentals of the technology of food products of animal origin, based on knowledge of the physicochemical, technological and biotechnological properties of raw materials;
• to conduct the processes of primary processing of milk raw materials, to reveal the falsification of milk raw materials, to assess the cheese suitability of milk in relation to the type of cheese produced;
• determine the loss of raw materials and the loss of cheese in the process of production and maturation;
• to draw up recipes and technological schemes for the production of cheeses, to design products produced by cheese technology on the basis of combined protein systems and with the use of food additives.
